Holiday Delight Cookie Recipe

HOLIDAY DELIGHT COOKIES
Makes 2 dozen cookies featuring our Jolly Holiday cacao truffles in four festive flavors!
INGREDIENTS:
1/2 cup butter or coconut oil (for dairy free), melted
2 eggs
1/2 cup maple sugar (or coconut sugar if you can’t find maple)
1/4 cup + 2 Tbsp maple syrup
2 tsp vanilla extract
2 1/2 cup blanched almond flour
1/4 cup coconut flour
1/4 cup + 2 Tbsp cacao powder
1 tsp baking soda
1 tsp sea salt
12 Maya Moon Jolly Holiday truffles, refrigerated
TO MAKE:
Preheat oven to 350 degrees Fahrenheit.
Cream together butter/oil, eggs, sugar, maple syrup and vanilla in a medium mixing bowl until smooth.
Sift flours, cacao powder, baking soda and silt over top of wet mixture, and stir to combine.
Scoop cookie batter onto parchment lined baking sheet using a tablespoon measure. Press down slightly with your fingers.
Bake for 8 minutes.
In the meantime, unwrap Jolly Holiday truffles and cut in half.
Remove tray from oven and press half a truffle into the center of each cookie.
Bake for another 5 minutes, then transfer to wire rack to cool.
